They are so sweet, these fresh, fuzzy peaches from the farmers market. Use them in a cobbler or, if you can't wait, eat them right away.
You'll start to find plenty of fresh fruits at the farmers markets around town. Check out the Larkspur farmers market at Marin Country Mart every Saturday, from 9 a.m. to noon, and the Corte Madera farmers market at the Town Center every Wednesday, from noon to 5 p.m.
This is a great time to pick peaches and soon we'll see more fresh tomatoes coming to market. Here's a recipe that combines the sweetness of the peach and the acidity of tomatoes for a tasty summer snack.
Peach and Heirloom Tomato Salad
Ingredients
- 2 ripe peaches, pitted, sliced
- 2 medium heirloom tomatoes
- 4 Tablespoons of olive oil
- 1/2 teaspoon salt
- 3 teaspoons balsamic vinegar
- 1/2 teaspoon fresh thyme
- goat cheese
Directions: In jar or medium bowl, combine vinaigrette ingredients well: oil, salt, balsamic vinegar and thyme. On plate, assemble sliced peaches, tomatoes, crumbled goat cheese. Drizzle with vinaigrette on top.
Serves 4 people.
